I don't know the big names, but at a local level I was very impressed the performance at the first round of the Savate League of Nabil from the London Savate club. (I gather that he's been in the French nationals.)
Dekkers fight against Pennachio was some years ago - 10 or so I believe. It took place in Italy. Everyone thought Dekkers would annihilate Pennachio, but he hardly laid a glove or foot on him apparently. I searched everywhere I can think of to try to get video footage of the fight, alas to no avail. Needless to say, it doesn't feature on Dekkers' DVD of his 100 best fights!
François PENNACHIO is a definite contender for me... Not only because he is a former World Champion with great technique and ability, but also because he beat the legendary Ramon DEKKER, fighting without his shoes and under modified Kickboxing rules.
